healthy fats do not make you fat!

For decades we have been informed from health advocates, governments, doctors, dietitians and the like, that low fat diets are healthy. It may seem to make sense on some level that if we don't eat foods with fat, then we won't actually get fat! Unfortunately more recent scientific research does not agree with this idea.

Firstly, our bodies break down our food into the smallest particles in order to be absorbed through our digestive system, and into our body. Then those particles are rearranged, packaged and delivered to cells to be used for many purposes. Fats and oils from our foods will get used in many ways:
  1. To absorb the fat-soluble vitamins A, D, E, & K
  2. To make hormones and neurotransmitters
  3. To make the cell walls for every new cell - we make 100's of millions each day!
  4. For fuel for cellular activities and functions
  5. To produce energy and enable us to do things during the day
  6. For weight loss!
  7. For proper functioning of nerves and the brain
  8. To maintain healthy skin and membranes
  9. And many other uses!
Fat storage from fats we eat is the last option, if it gets there at all! Coconut oil, for example, will get used for energy, and will not contribute to body fat at all!

Secondly, there are some fats we MUST eat regularly, as they are called "essential fatty acids", or just "essential fats". These are omega-3 and omega-6 fats - and they are essential because our bodies cannot make them! We need to eat these fats in our diet! Good sources of omega-3 fats include fish (salmon, tuna, mackerel, trout, sardines etc, with the skin on!), raw nuts and seeds, eggs, avocados and grass-fed meats (not grain-fed!). Good sources of omega-6 fats include some vegetable oils, raw nuts and seeds, butter, eggs, and dairy products.

Thirdly, the other issue with fats is which ones are safe and healthy to cook with. Without getting into too much chemistry, plant-based oils should never be used for cooking with! The only exception is coconut oil, which is a healthy saturated fat oil. The reason is that all other plant-based oils contain mono-unsaturated and poly-unsaturated oil, but when these are heated, they change their fragile structure and become oxidised, full of health-damaging free-radicals and other toxic breakdown products such as aldehydes.

A recent experiment was performed in the UK where various cooking oils were heated to normal cooking temperatures to see what effect this had on the oils. The allegedly "healthy" sunflower and other vegetable oils produced aldehydes at levels more than 20 times the World Health Organisation's safe levels! Olive oil fared better, but it still isn't recommended for heating and cooking with. Butter and other animal fats were stable and the safest for cooking! Coconut oil is also stable when heated and is also recommended. The plant-based oils are ok as a dressing on foods only, or for massage! I recommend olive oil as being the healthiest for dressings on foods - mix it with various herbs and spices, and Balsamic or other vinegars for a tasty and healthy dressing!

While most fats can be healthy, the exception is trans-fat, which is found in fried foods, processed and packaged foods, and margarine. It is trans-fat, and oxidised vegetable oil (from heating and cooking), which causes inflammation in the body and this is a leading cause of all chronic health conditions, such as heart disease, weight gain and obesity, diabetes, infertility, and even cancer.

For your overall health, you need to eat the right fats and oils, and avoid the wrong ones!

Microwave cooking and effects on your food & health

Microwave ovens were meant to be the ideal tool for convenience cooking in today's busy and time-limited life, much like the frozen-dinner idea that goes along with them!

However for a health perspective, microwave ovens are one of the worst things you can use...

Microwave ovens heat up food by stimulating massive friction between water molecules in the food. This causes a very rapid increase in temperature, but at an uneven rate and temperature in foods with different concentrations of water. This is why some parts of your microwave meals are scalding and others are still cold!

Scientific research into microwaving foods includes the following:
1) In the Pediatrics journal (1992, volume 89, no. 4) - showed that warming human breast milk in a microwave oven destroyed the natural antibodies and enzymes, and further damaged the cells in the milk. The results occurred even when the milk was warmed to low temperatures.

2) Microwaving food in contact with plastic containers causes chemicals in the plastic to leach into the food, which you can sometimes taste (such as when you leave a plastic water bottle in the sun or in a hot car). Such chemicals in plastic can be carcinogenic (cancer-causing) or they can mimic normal body hormones and thus have effects on the body. These chemicals can also affect fertility and sexual development (ie, early puberty in children). This occurs even in BPA-free or "microwave-safe" plastics.

3) Epidemiology and Infection journal (1995, vol 115, no. 2) - The uneven temperatures in food from microwave cooking can cause food poisoning from salmonella.

4) Vitamin C, an antioxidant vitamin (in fruits, vegetables and some meats) is required for good immune system function and protective against stress, but is particularly affected (ie, hugely reduced) by microwave cooking.

5) Vitamin B12 found in meats and other animal products (eggs, dairy etc) is also greatly reduced (ie, destroyed) when cooking in the microwave oven.

6) Microwave ovens leak radiation to the environment and to anyone standing nearby when they are being used.

So while microwave ovens appear to be convenient in our busy lives, they come at the expense of destroying the food cooked in them and affecting your health. With a little planning and only a little more time, you can cook, reheat, steam, bake or grill your meals instead, and it doesn't take that much longer!

It's still best to steam your vegetables and fish, or reheat meals in saucepans or in the oven - but not in "safe" plastic containers or using any plastic cookware, not just for retaining more nutrients in your food, but for your overall health.

PLASTIC AFFECTS YOUR HEALTH...

Plastic! Apart from creating a whole log of unnecessary rubbish in our environment, buying or having foods in plastic can have undesirable effects on your health.

Let's just take plastic water bottles for a start - have you ever left one in the sun or in a hot car and then tasted the water in it? It tastes of chemicals and not very nice... that's the chemicals leaching out of the plastic due to the temperature. Such chemicals (such as BPA) can be xeno-oestrogens - they mimic the oestrogen hormone in our bodies and as such, they disrupt normal body functions, which is not a good thing! Other chemicals in plastics are potentially carcinogenic - cancer causing.

Xeno-oestrogens can affect us in different ways - causing young girls to reach puberty from 7 years of age, causing weight gain, man boobs and shrunken genitals in men, and hormone/mood swings, breast cancer and disrupting menstrual cycles in women.

Allegedly BPA-free plastics are supposed to be safe, yet they are still made from chemicals that leach into your water/foods when heated. As a result, I recommend avoiding ALL plastic bottles and containers, and using glass or stainless steel (not aluminium) bottles or containers instead.

Some things you may not know:
1) Cooking foods in plastic (from ready-meals) or microwaving leftovers in plastic is about the worst thing you can do. The extreme heat generated by microwaves leaches much more of the plastic chemicals into your food.
2) Freezing foods in plastic has a similar effect to heating - as the plastic shrinks, chemicals are again leached into your food.


Anything that disrupts your hormones is very bad news for your health, as hormones control most of your body functions and are released in specific amounts for their required purposes. Any external sources of hormones such as from plastics is going to cause an unknown number of health issues.

Simple little things like not using plastic storage containers for food, and certainly not using plastic bottles for water or heating/freezing food in plastic containers can be beneficial to your health.
